My Mama's Lemon Trifle

There is never a bad time of year to enjoy some lemon zest! The refreshing and heavenly dessert that inspired my "Zest for Life" was my mom's homemade lemon trifle. The love and care that my mom puts into this dish just adds extra special zesty flavor. The layers include pound cake infused with freshly squeezed lemon juice, cool whip, white chocolate pieces, lemon pudding, and blueberries garnished with extra lemon zest. The rich ingredients contrast delightfully with the tartness of the fresh blueberries. The texture variety is out of this world from the smooth and creamy pudding layer with the fluffy cloud like cool whip separated by crunchy white chocolate pieces. The pound cake is like a sweet sponge soaking up all the flavors making each bite absolute perfection.

Last weekend I flew back home for fall break to be with my family. My mom made her iconic lemon trifle as a welcome home gift. Nothing is better than real hugs from my parents, but this dessert is a strong second place. After I got all the happy tears out from hugging my mom at the airport, I got to repeat the feelings of warmth and bliss from every bite of the trifle.

Food is my love language and paired with family time feels like a gift from God. Something as simple as a delicious dessert like this one fills my heart with an abundance of gratitude and enthusiasm for life... or you might say a zest for life!
